Batter: 8 eggs 1 cup flour 1 tsp. baking powder 2 tbl. brown sugar pinch of salt 2 cups milk 4 tbl. melted butter 1/4 tsp. nutmeg
Mix first 6 ingredients in a blender. Add butter and nutmeg. Let stand 30 minutes or overnight in refrigerator.
Apple Mixture: 1/2 cup butter 1/2 cup brown sugar 1/2 cup apple juice 1 tsp. cinnamon 1/4 tsp. nutmeg 2 large tart apples (Granny Smith)
Melt butter in a small saucepan. Add next 4 ingredients. Stir and let simmer. Slice apple and add to mixture. Let mixture cook for 2 minutes.
Heat oven to 350 degrees. Grease a 13x9" baking dish. Spread apple mixture evenly over bottom of baking dish. Gently pour batter over apples. Bake for 35 minutes. Serve with syrup. Makes 8-10 servings.
