  Recipe : Beulah's Banana-Pecan Cake

Ingredients:

1 ½ cups oil
1 ½ cups sugar
3 eggs
1 teaspoon baking soda
1 teaspoon salt
3 cups flour
1 Tablespoon vanilla
½ cup evaporated milk
1 ½ cups mashed bananas (about 3)
1 cup chopped pecans

Directions:

Mix oil and sugar. Add eggs.

Sift flour with salt and baking soda, add to egg mixture.

Add vanilla and milk. Mix well. Add bananas. Add pecans. Pour into a greased and floured bundt pan.

Bake at 350 degrees for 60 minutes or until toothpick inserted in center comes out clean. Invert onto plate to cool. Good served chilled from the refrigerator.

Can be frozen.
