| 8 eggs 4 tbsp butter, melted 1/3 cup flour 1 tsp baking powder 1 cup cottage cheese 1-1/2 cups shredded cheddar cheese 1 to 2 tsp dill (or other favourite herbs) (fresh) parsley pepper to taste
Whisk eggs with melted butter. Add flour and baking powder and whisk until smooth. Stir in cottage cheese and shredded cheese, dill (or other herbs) and pepper. Stir until smooth. Grease 9 inch pieplate* (or spray with Pam). Pour eggmixture into pieplate and bake at 350 degrees Fahrenheit for 25 to 35 minutes until slightly browned and knife inserted in centre comes out clean. Remove from oven and rest for a few minutes. Cut in wedges and serve with tomato slices and sprinkle with more parsley. Serves 6 - 8.
