  Recipe : Zucchini Bread

Ingredients:
3 eggs
2 cups sugar
1 cup canola oil
1 Tbs. vanilla
2 cups coarsely grated zucchini

2 cups flour
2 tsp. baking soda
½ tsp. baking powder
1 tsp. salt
1 T cinnamon
1 cup chopped walnuts

Directions:
1. Beat eggs until frothy.
2. Add sugar, canola oil and vanilla and beat until thick and lemon colored, scraping sides of bowl often.
3. Stir in 2 cups loosely packed coarsely grated zucchini.
4. In a separate bowl, sift together flour, baking soda, baking powder, salt and cinnamon, and then add to mixture.
5. Fold in chopped walnuts.
6. Pour into 2 greased and floured loaf pans.
7. Bake at 350 for one hour.
8. Cool 10 minutes in pan, then remove and cool on rack.
